Bacon Cheddar Mashed Potato Casserole

Ingredients

Gather potatoes (Yukon Gold or Russet), bacon strips, shredded cheddar cheese, butter, milk (or cream), garlic powder, salt, and pepper.

Prepare Potatoes

Peel and dice potatoes. Boil in salted water until tender. Drain well and return to the pot.

Cook Bacon

In a skillet, cook bacon until crispy. Remove from pan, drain on paper towels, and crumble into small pieces.

Mash Potatoes

Mash the boiled potatoes in the pot. Add butter, milk (or cream), garlic powder, salt, and pepper. Mix until smooth and creamy.

Add Bacon and Cheese

Stir in most of the crumbled bacon and shredded cheddar cheese, reserving some for topping.

Transfer to Casserole Dish

Preheat oven to 350°F (175°C). Transfer the mashed potatoes to a greased casserole dish.

Top with Cheese and Bacon

Sprinkle the remaining shredded cheddar cheese and crumbled bacon over the top of the mashed potatoes.

Bake

Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
